A few minutes later, the waiter returned with a whole sardine staring back at her – eyes, head, tail, and all.

OkaaAaAay, to be fair, in the small towns along the Camino, finding proper vegetarian or vegan food can still be difficult…But cities like Barcelona are a completely different story!

Over the last decade tho, Barcelona has evolved into an exciting destination for plant-based food. Catalan cooking already includes olive oil, tomatoes, grilled vegetables, legumes, rice dishes, and seasonal produce. A new generation of chefs has taken those traditional ingredients and transformed them into modern plant-based comfort food. Barcelona’s vegan scene isn’t just casual cafés and brunch anymore. Over the last few years, several restaurants have pushed plant-based cooking into proper fine dining territory, with seasonal tasting menus, natural wine pairings, and chef-driven presentations that are usually associated with Michelin-level kitchens.

Probably the most respected vegetable-focused fine dining restaurant in Barcelona right now, also been repeatedly recognized internationally as one of the world’s top vegetable restaurants.
The restaurant offers separate vegan, vegetarian, and omnivore tasting menus. Chef Xavier Pellicer – formerly of Michelin-starred kitchens – built an entire philosophy around seasonal vegetables as the main event rather than a side dish.
